The Perfect Victoria Sponge Empty

175g/6oz of Self Raising Flour
pinch of salt
175g/6oz Stork Margarine
175g/6oz Caster Sugar
1/2 tsp Baking Powder
3 Eggs

Preheat yer oven to 190c
Grease and line two 7" cake tins
Put all the ingredients into a bowl
Whisk with electric mixer until smooth
Divide between tins and smooth surface

Bake in center of oven for 25-30 min

Fill with half a pot of jam and/or a full pot of extra thick double cream (whipped up)
Dust top with icing sugar

Stand back while the hungry hordes descend Smile

this recipe is coming with me next week to the youth centre for the kids to make (and more likely the leeders to enjoy Laughing )

For the cream I used a full pot of extra thick double cream (will edit the recipe above)
